Sustainable Sourcing
Pembroke works hard to use local suppliers and selects seasonal produce wherever possible.
We are members OxFarmtoFork, an initiative set up by Good Food Oxfordshire which connects institutions with local farmers and producers through a short, fair, zero-emissions supply chain. We also strive to support local businesses including Aldens Oxford, Oxford Oils, and Chadlington Brewery.
Our menus have been redesigned to contain seasonal items (for example only using asparagus in April & May, not using berries around Christmas and only using seasonal or farmed fish from accredited sources).
Being part of the Collegiate food purchasing consortium (FoodBuy) helps us reduce the number of suppliers we use by consolidating the number of supplier deliveries to three times per week. This has reduced our carbon footprint in this activity by at least 40%. An increasing number of our suppliers are using electric vehicles and moving towards plastic-free deliveries.
